Abstract The prickly fish is a marine with flat body, many fine spines, flavorful texture, and delicious savory taste. This study aims to analyze several formulations of meat determine the chemical composition fish-based flavoring powder other composite materials. processing ingredients for are meal (60-80%), onion flour, garlic salt, sugar, white pepper powder, turmeric powder. research approach includes manufacture seasoning various treatments, including control treatment (without fish, F 0 ), use 60% (F 1 70% 2 80% 3 ). best results showed that formulation was 35g shallot 25g 30g 6g 2g Characteristics quality product have moisture 3.61%, protein content 38.49%, fat 3.75%, an ash 20.72%, carbohydrates 33.43%, salt (NaCl) 31.43%. shows has high potential be used as natural substitute MSG in food products.
